Freshly roasted beans often show the beans oils. Darker roasts occur with various stages of the oils seeping out to coat the surface of the beans naturally. The oil actually seeps out in stages, first a few dots, then some blotches or splotches, and then finally an overall glossy sheen all over the bean. The oil that occurs naturally in coffee beans is about 15% of the green bean. After roasting, the oil is released because the bean becomes porous.
We recommend you put in at least as much as you did with your previous roast. You can always dilute coffee with water, but you can never make it stronger. DO NOT be fooled by the strong smell our coffee. If you are drinking another coffee that does not smell as strong, you are drinking freshly roasted coffee.
After we fill each individual serving pouch with coffee, we insert a small piece of cotton ball as we synch up the top and then tie the pouch shut. The piece of cotton ball helps to stop any possible spillage of coffee during shipment, storage, or brewing. This cotton can be left in the pouch during the brewing process, however if you remove it, coffee may float out as you make your coffee. It is best to leave in place.
Yes, this is normal. It is a natural characteristic of a freshly roasted and packaged coffee, especially with the darker roast. It is part of the flavor profile of our coffee, a smoky overtone. Directly after the smoking hot beans are dumped into a bin, they are cooled quickly to prevent from overcooking or becoming a darker roast than requested.; A lighter roast will have less of the smoky profile.
Again, this is part of the fresh roasting and packaging process. Our coffee does not have the flavor loss that commercial coffees have. Most people find 1 TBS per cup to be good. We strongly recommend you make sure your coffee is at least strong enough when you brew it. Why? You can always add a bit more water if it is too strong for your palate, but you can never make weak coffee stronger by rebrewing it. Heat and exposure to heat is a flavor destroyer of coffee. That is why reheated coffee taste almost nothing like a fresh pot. Coffee is best within 15 minutes of brewing.
We believe in FRESH coffee, so we roast after we receive your order. We don't pre-roast and let it sit in warehouses like many, if not most of our competitors. We roast our coffee beans in the beautiful fresh mountain air from the depths of the Maine woods. In order to mail your coffee during the snowy months we have to snowmobile it 7 miles to our vehicle and then transport it to the nearest town, a 10 mile one way trip.
Our official office is located in Palmyra, Maine, but most of our coffee orders will be shipped out of Millinocket, Maine.
Our Dam Coffee beans are Fresh-Fresh-Fresh. Unlike most coffee bean companies who mass roast their coffee, fill bags and then let them set at warehouses and stores for months, if not years on end, our Dam Coffee beans are roasted after you place your order, not before. This is the only way to ensure the best quality coffee possible!
Currently, we offer Medium and Dark roasts.
No, we do not currently offer different coffee flavors. However, that may be a consideration in the future.
Due to many of our customers not having a coffee grinder, we have purchased a multi variety professional coffee grinder. Therefore, we can now grind your beans for you; however, that is not something we recommend, simply because once the coffee is ground, it starts losing flavor and freshness. It is best to grind the desired amount of coffee just before you want to brew it. Doing so offers the best tasting coffee.
Like coffee pots, there are many different kinds of coffee grinders. To figure out which is best for you, you can research on your own, or see our store for coffee bean grinder suggestions
You don't need a fancy coffee brewer to enjoy our coffee. Any standard coffee brewer pot found at any department store works as perfectly as any other. Generally a brew time of 7-11 minutes is best though.
Our coffee brews best in standard home coffee brewers. Until the carbon dioxide gas is released completely, in about 2-3 minutes, the grounds tend to float. For this reason, if you use a high speed coffee brewer, such as a Braun, or other types that uses preheated water. Bring about 1/2 a cup of water to a boil and pour it over the grounds about 1 minute before you turn on the coffee pot.

International orders by email request only, and must pay full shipping & handling charges. Samples will be sent to USA addresses only.

We ship in the highest quality reseal-able Zip-lock foil/poly blend bags with one way vents to allow carbon dioxide gas to escape. Each bag gets placed in a box and shipped out via USPS.
If you should puncture your coffee bag, store your coffee in a non-porous container (porcelain works well). Make sure the container is airtight. Look for one with a lid and a rubber seal. Make sure the container is opaque. Light breaks down the coffee oils, losing flavor. Purchase whole bean coffee and store it whole. Ground coffee goes bad faster. Some do not recommend storing coffee in the freezer or refrigerator, but we've done it for years without hesitation. Personally, we keep our roasted coffee beans in a regular Zip-lock bag and in the freezer until just before brewing. You should reseal the bag bags we shipped your coffee in, pressing as much air out of the bag through the vent as possible before putting your beans into the freezer. This keeps your beans fresher longer.
Any brand of coffee can be kept warm on a burner for only 20 minutes before the flavor starts to turn bitter. We recommend that you only brew your coffee 5 minutes before you are ready to drink. An airtight thermos will preserve the flavor; We recommend a stainless steel coffee carafe.
During the roasting process green coffee beans lose moisture. Sources claim that 1 lb. of roasted beans will weigh about 13 oz. after the roasting process. Our experience is tshat we rarely had a a pound of green beans weigh more than even 13 ounces after roasting, sometimes as little as 11.5 ounces. We weigh your coffee after the roasting process, so you can be assured you are getting13 oz. of fresh coffee every time.
Yes, we really roast every bag of Dam Coffee after you place your order. It is the only way to ensure optimal freshness. Other coffee items, such as samples, air fresheners, single brew bags, etc. may not be brewed after you place your order. Sometimes these are made from coffee overages from the previous 1-2 days.
